Savory Oatmeal with Spinach and Poached Eggs
What you’ll need:
2 tablespoons extra virgin olive oil.
½ onion (med sized chopped).
1 cup organic rolled oats.
2 cups purified water.
4 poached eggs.
1 cup spinach.
Ready to cook:
Heat your olive oil in a medium skillet, once hot then add your chopped onions. Stir and cook tender. Next, pour in your oats and cook an additional minute. Pour in your water and bring everything to a boil. Reduce the heat and let simmer. Stir occasionally until oats are tender, then remove from heat after about ten minutes.
Serving stage:
Divide your mixture into four serving bowls; sprinkle a teaspoon of salt and a pinch of pepper; top each bowl with spinach and 1 poached egg. Sprinkle with chives.
