Recipe Du Jour [Gingerbread Pancakes]
No intro needed folks... these are gingerbread pancakes…enough said!!
What you’ll need:
1 cup whole wheat flour
1 cup all-purpose flour
1 large egg
1/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
Pinch of salt
1 cup reduced fat milk, or buttermilk
3 tablespoons original unsulphured molasses
2 tablespoons vegetable oil
How to make:
Whisk the flours, sugar, baking powder, cinnamon, ginger, allspice, cloves, nutmeg, and salt together in a large bowl.
Whisk the egg, buttermilk, molasses, and 2 tablespoons butter or oil together in a bowl.
With a spatula, gently stir the egg mixture into the flour mixture just until a thick batter forms.
Heat a 2-burner griddle or large cast iron pan over medium-low heat for at least 5 minutes.
Melt butter in the pan to coat the bottom.
Spoon batter in 1/4-cup measurements to make 4-inch round pancakes. Cook until bubbles start to form on the surface of the pancake, flip it and cook the other side for about 3 minutes more.
