Couscous Ground Turkey Stir-Fry
Ingredients:
2 cups butternut squash (dice and peel).
1-pound ground turkey (lean).
½ cup of couscous (wheat).
A pinch’s worth of salt and ground black pepper.
1 tsp of extra virgin olive oil.
1 cup broccoli florets.
1 can organic black beans.
1 can organic enchilada sauce.
½ cup fresh salsa.
Suggested toppings: avocado, cilantro, lime juice.
Directions:
Pour ½ cup of water into a medium-sized saucepan. Bring to a boil. Pour in your couscous and stir. Turn off heat, cover and let sit for approximately 5 minutes. Fluff the couscous and set to the side.
In a large skillet or wok, cook your ground turkey over medium heat until thoroughly browned (approx. 4-6 minutes). Sprinkle your salt and ground black pepper over the turkey. Transfer to a bowl. Drain the fat and wipe your skillet clean. Heat your virgin olive oil over high heat then add your squash and cook, until browned and softened (10 minutes). Add your broccoli, stirring all ingredients for another 5 minutes or so. Add the turkey, black beans, enchilada sauce and salsa and stir until all ingredients are well combined. Serve with the couscous and top with suggested toppings.
